SAMPLE HORS D'OEUVRES AND MORE MENUS
These Hors d'oeuvres and more menus are for informal-casual affairs or corporate events. The Hors D'oeuvres are butlered for two and a half to three hours along with a single food station being open for the same period of time. Guests generally will visit the food station two or three times. Hors D'oeuvres and more menus can range in price from $30.00 to $60.00 per person. Below is a sample menu.

HORS D'OEUVRES (8 pieces per person)
Light puff pastries filled with crabmeat, spinach, and bell peppers.
Chicken satay with a peanut dipping sauce.
Fresh mushrooms stuffed with spicy hot sausage, cornbread, and cheese country pate of veal, pork, and fowl served with crackers.
Tender filet Mignon tips with Béarnaise sauce.
Coconut curried shrimp.
Cheese beer toast.

A brunch buffet is a wonderful way to make a Saturday or Sunday affair elegant, but still casual. The following brunch buffet menus should be considered starting points. BRUNCH BUFFET
Whole poached chilled salmon with cucumber scales and a mustard and basil sauce.
Egg strada - layers of bread and eggs with fresh mushroom, spicy sausage, and cheddar cheese.
Buffet-size puff pastries filled with a rich crabmeat, spinach, and bell pepper mixture.
Penne pasta with fresh vegetables including asparagus, cucumbers, and carrots tossed with a peanut, sesame, and sweet soy dressing.
An assortment of fresh cut fruit including pineapples, melons, strawberries, grapes, and other seasonal fruit with a honey walnut glaze.
Fresh baked croissants, cinnamon streusel, and zucchini bread.
A variety of condiments including sweet butter and preserves; orange, and tomato juice, coffee, decaf Colombian coffee, brewed decaffeinated, and tea.

Summer is the time to grill outside. Vegetables are at their peak. Seafood is plentiful. Please look at these sample barbecue menus. Let us design a special summer menu for you. Outside summer buffet menus can range in price from $25.00 to $70.00 per person. Below is a sample menu.
